Grain Free Carbonara with Mushrooms and Peas
I used angel hair.
Ejay’s uncured bacon
This was 2 ounces cooked
This was 2 2/3 cups.
butter flavored coconut oil
Chop bacon, onion and mushrooms. Peel garlic, if needed. Pan fry bacon. Bowl water for miracle noodles.
Place bacon on paper towels. Scrape bacon pan out and add 2 tablespoons coconut oil.
Rinse miracle noodles and boil for two minutes. Whisk egg in a bowl with 4 tablespoons parmesan cheese, salt and pepper.
To the coconut oil, add mushrooms and onion. Cook until onion is translucent. Add garlic, bacon, and pasta. Cook until hot. Add egg mixture. Cook for one more minute.
Serve! Top each serving with additional parmesan and pepper. Serve with a side salad.
