Healthy Egg Bake

I like to make this egg bake at the beginning of the week and use it as a quick breakfast all week long.  To reheat a serving, cut it in half and bake at 350 for about 15 minutes.  I don’t even preheat the oven; and I bake it on the plate I will be eating it on.

Find the Egg Bake nutritional info on MyFitnessPal to log in your food journal.  252 calories per serving.  My husband and I find that this keeps us satisfied for hours.

Instructions
  1. Trim the bacon. Weight out to .75 pounds. Chop and fry up in a pan. Drain the grease.
  2. Chop the spinach, peppers, tomatoes, mushrooms and onion. Wilt the spinach in the bacon pan. (I do this because of the volume of the spinach. It fits better in the pan this way.)
  3. Whisk the eggs in a bowl with the oil. Add the bacon and veggies. Peel the garlic and chop small or use a garlic press. Add to the mixture with desired amount of salt and pepper.
  4. Pour into a glass baking bowl. I used one a little bigger than a 13x9". If you don't have a bigger one, then use two smaller ones and decrease baking time.
